Here’s what I am going to attempt to make today. Antonia loves the rolls at Subway. They are soft enough they are easy to bite through. Sturdy enough to hold sandwich fillings.
Of course, the roll has got to be able to accommodate fillings like chicken or tuna salad. Or mayo, mustard, and a lot of people like oil and vinegar dressing.
Cheese! Now we get to my favorite part of a sandwich. I grew up on the yellow American. As an adult I prefer white sharp cheddar. I also enjoy cheeses like gouda, munster, and good old feta. Over the last couple of years I have seen fetta whipped into a dip or spread consistency.
As for my favorite fillings like no love Cuban sandwiches. It’s pressed crunchy bread with swiss cheese pork two ways. A sliced dill pickle with mayo on one side and mustard on the other side. Then put it on a griddle or a panini press. That will create the beautiful crunchy crust.
