I will be spending my New Year’s making tamales. That wasn’t my original plan. I do enjoy making items that people in my life enjoy.

Everyone makes a big deal about sheet pan meals. What happened to desserts? I realize most women haven’t touched desserts since they found out fat free wasn’t healthy. Except for me.

I like sweets and baking. Not so much the cleaning. When I can reduce the amount of cleaning, I am all in. That’s the advantage of sheet pan desserts and meals are about.

New Year’s Eve and Day

Hope you had a wonderful Christmas. Let’s talk about the next holiday. New Year’s Eve and Day. Yep! They are about three days away. I do think if I had to choose to host a get together I’d rather have either Thanksgiving or New Year’s. There’s no pressure of a gift. And it’s not as stressful as Christmas. 

Okay let’s look at the house (or apartment). How does it look. Does it need a quick little cleaning? Perhaps decluttering? Good! It feels great to have one day a month for a mega cleaning where you move furniture and really scrub things down. The links below will give you some excellent ideas for New Year’s Eve and Day.

Pressure Canning a Partial Load

I have been watching and reading content by Sharon at http://www.simplycanning.com since I started canning almost four years ago.

With Canuary stating Saturday, I thought I’d include this post. Sharon goes over an issue canners face often. Run a pressure canner with a partial load or not. Sharon gives a clear answer. You can. However, if you put some cans with water then you have a full load. You’ll have food and emergency water.

Here are some more recipes for your Christmas leftovers. How us this different from the last one?

The difference between the last post was mainly for Ham leftover. This one has every protein covered. Roast beef, turkey, or ham. Sandwiches, appetizers, salads, and soups are covered. I have memories of my late mom make soups after a holiday meal. Sometimes there’d be hot turkey and gravy open face sandwiches. Then cold turkey sandwich. Then came the turley and rice soup. Not a fan of the soup. Turkey noodle soup, I am there.

Turkey noodle soup is made the same way as chicken noodle only swap out chicken for turkey. I don’t there is any casserole that can’t be tweaked.

Merry Christmas

When y’all read this it’ll be Christmas Day. Hope y’all have a wonderful day with your family. Let’s take a day to remember what Christmas is supposed to be about. The birth of Jesus Christ. The son of God who would be crucified at age 32 so forgiveness of our sins.

Growing up Christmas was about Christ and family. The people we are bonded to by blood and sometimes by choice. I have warm memories of Christmas dinner. My mom and I made fudge which would be a gift. Pies for Christmas. A ham in the oven, mashed potatoes, corn, green bean casserole and  my aunt would bring rolls with a relish tray. Crackers and cheese alongside chips and dip. I almost forgot deviled eggs. Breakfast was cereal. I wasn’t going to fill up and miss out on the feast. I don’t remember the gifts. I just don’t. I remember sharing a meal with my late aunt and uncle. Every year he would start at Thanksgiving threatening to get me a drumset. I would be disappointed each year until I realized he was teasing my mom. Boy would she get worked up. 

So this year we will have a similar menu. Next year will be twenty years since my dad passed on. I miss him greatly. 2023 will be the ten year mark for my mom’s passing. I guess the older I get the more I miss the people who have passed on.

In 2001 I had the one and only holiday season with my maternal grandparents. It was the first time Grams and Grandpa had been to Florida. It was their first holiday season without snow. I remember Grams having a fresh orange for the first time. She had juice running down her arms. She enjoyed it so much. We made cashew clusters and fudge. She helped make all three holiday meals. That was also my first birthday with her. Again, I don’t remember the gifts specifically. I remember the scents that flowed through the house. It was truly wonderful. 

Christmas Eve

What’s the meal plan? Did you prepare and freeze something ahead of time? If you ordered something ahead of time I am sure you have paid for it and got the confirmation call. Be sure to leave time so you can pick it up. Oh yeah! Y’all don’t forget to check the weather. Keep in mind I’m saying this now because it’s so easy to get caught up in the holiday rush. I used to get wrapped up in the rush and forget little details.

Now is the time to take one last look around and do some last-minute cleaning. It won’t take long. After all, you scrubbed the house from top to bottom three weeks ago. Now it’s just picking up the day-to-day stuff. Show Grandma around your kitchen and let her get a lay of the land. Now would be a great time to surprise her with a custom apron. Why is it custom? It has pictures of her grandchildren on it. And her great-grandchildren will be surrounding her this holiday.
