Sri Lanka Dal

I wsnted to share a recipe from Sri Lanka as a way to show unity and empathy for their situation. They have maybe a day’s fuel left and very little food. At this point the consequences of 2020 world wide shutdown are rearing their heads.

Now let’s look at the Dal. This is a beautiful dish to look at. It’s got bright colors and flavors. Chilis, Tumeric, and Tamarind. Mexicans use in candy. Tamarind has a slight bitter taste so it can be used for sweet or savory.

Ted lentils are an excellent legume. They pack a lot of nurtition in a small package and they can carry bold flavors easily. Any vegetable combination can be presented here.

Meat or no meat! Personal choice reigns supreme here. Beyond that Dal is served with Basmati rice, naan, or by itself.

Alright guys here’s what we are seeing here in Southeast Michigan. The prices haven’t really gone up but you’ll notice how the boxes are arranged. There was enough space between the first and last box of corn flakes. Sorry for inconvenience stickers and limits on items.

Brown Out vs Black Out: Which is More Livable?

We’ve seen numerous articles over the last couple of weeks about “controlled outages”.  We’ve been told about Brown Out vs Black Out but none of the news companies haven’t really explained very well what the differences are. I know I didn’t know there was a difference. So here like I said in the Hurricane 2022 video, we will look at and examine the differences. 

Brownout – Partial electric. 

Think of it as the company rationing electricity. According to the article, I will share that gives an easy-to-understand explanation, electricity is cut from 10% to 25%. 

Blackout – Total darkness. Nothing works. 

So which one is more livable. I would say Brownout would be more livable. Hell, it’s how we currently live. We don’t use the air conditioner unless it’s 85 or higher. Not happening. I don’t use the oven until Fall.

Slow Cooker Ribs

I love doing ribs in the slow cooker or insta pot. The key difference is the slow cooked taste that slow cooker delivers compared to the insta pot. There are some key factors that makes ribs unforgettable.

1. Remove the film on the bones. Usually the racks of rubs have a film on them. I don’t remember the technical name for it I just call it a pain. In order to have great ribs, it has got to be removed.

2. The sauce. This might not seem like an important thing but it is. It has got to be balanced with spicy, sweet, and acidic. The acidic factor helps to tenderize the meat.

3. Cooking method. I said above I using my slow cooker for ribs. My late mom used hers all the time for roast, chili and anything else she wanted. I am Southern so slow smoked is a favorite. 

With that said, slow cooker ribs are the next best thing.

French Potato Salad Recipe | Ina Garten | Food Network

This potatoe salad is perfect for Summer cookouts. No dairy and bold flavors. The key element that makes this salad perfect for cookouts is oil and vinegar based dressing.

There are two different types of potatoes here. We have champagne vinegar with Dijon Mustard. This brings a lot of flavor. Dill, parsley and green onions. The important thing is to dress the potatoes while they are hot. They will absorb the flavors quicker and easier.

Moroccan Carrot Salad

We are two days out from Independence Day. I hope these post have inspired you to step outside the norm of the usual potato salad.

This Moroccan Carrot Salad is full of flavor. Preserved lemon, coriander fresh and ground with cumin. Harrisa paste this you can use as your taste. If you like spicy go crazy. If you like a touch of spice, add little by little.

As for the mint. Little bit does the trick.

Greek Cucumber Salad

Here’s another salad perfect for summer cookouts. It’s got a lot of vegetables. You could add pasta. The dressing is vinegar and oil based.

Let’s look at the veggie line up here. Black olives add a nice meaty texture. There’s cucumbers which I would recommend one that doesn’t have a wax exterior like the usual. But if that’s what you use it. Red onion and tomatoes. Fete cheese!

Dressing elements are next. Lemon juice, vinegar and olive oil. Then we move on the the herbs. If you do a lot of Italian or Southern French cooking than you may already have oregano. Beyond that it’s salt and pepper. Simple as can be.

Dairy products won’t be missed.

Russian Fast Food: Belyashi

The Belyashi is similar to our hot pockets. Meat filled fried goodness!

These couldn’t be easier to make. And fairly inexpensive. The most expensive part now days would be the meat. Use store brand oil and your set. You have to make the dough and let it proof. During this time you can assemble the filling.

What goes in the filling? During the Soviet Union, it would’ve varied by location. General items were salt, pepper, onion and whatever herbs were available. The directions tell how to fold these dumplings.

What would go with them? Russian Potato Salad comes to mind.

Marinated Olives

Monday is July fourth… My God in Heaven this is zipping right by us. It’s like standing still on a carousel. Here’s a great idea for an appetizer for a July fourth get together.

Honestly, it sounds delicious. Olives with Greek seasoning olive oil and vinegar. Yum! This marinade would work with any vegetable combination. Without a doubt this kind of salad would be a better choice than a dairy based dip or salad.

The next few post will be cookout related. They will be based on using ingredients you will already have.
