Lazy Kuban Dumplings

https://www.russiabeyond.com/russian-kitchen/335231-lazy-kuban-dumplings-strumby-pelmeni-recipe

Confession: lazy was what caught my eye. 😜

This wonderful dish gives the opportunity to use items in your garden or use up ground meat. Don’t let the dumpling part scare you. You fry these wonderful little bites of awesome. Then you simmer them in tomato sauce.

What to serve with them? Since these are a combination of Kuban (in Russia) and Ukrainian Cuisine you could serve Ukrainian style kraut and/or Russian Potato Salad.

https://pinchofyum.com/12-easy-recipes-you-can-make-in-a-slow-cooker

Slow cookers were made for summers. Slow cookers caught on in the early 1980s. They were marketed to busy moms. However, moms everywhere discovered how awesome they are.

Here’s twelve incredible recipes. They can be used for any season. Just change veggies and you’re good to go. Keep a variety of seasonings and that will make a difference.

Watch “Meijer’s Walk Through” on YouTube

I went to my yearly Mammogram. I am good to go for the next six months. I feel like I dodged a bullet.

Meijer’s in my area are renovating this store. I’m happy to say that it’s almost done.  Baby formula is recovering. Healthy snacks are limited but junk food snacks weren’t.

Watermelon Mocktails

This is an awesome drink. It’s cold and refreshing. Exactly what you need on a hot summer day.

There’s a lot of flexibility to this recipe. You can add alcohol of your choice. I’d recommend a light flavored one. Perhaps coconut flavor would be good. You’re supposed to use lemonade, but you could use limeade instead. I love the idea of using Sprite or 7Up. In our current situation with inflation you may want to go for store brand unless it’s a special occasion than spring for name brand.

Now what do you think?

Watch “Five Tips to Making Perfect Fried Rice” on YouTube

This is going to be a short post. Mandy is sharing a great video on Fried Rice. Mandy shares a few tips to making this rice.

Here’s my favorite tip: use what you have. Yeah! Use what you have in your fridge, freezer, and pantry.

Once A Year Mammogram

Today I am going for my yearly mammogram. After last year they found a mass that ended up being nothing to worry about. The pre-winter inventory is almost done. It’s taken so long because we’ve had days that were so hot you don’t even want to breathe.

I am finding holes and things I need to deal with. Good news is there hasn’t been much I had to toss. I am extremely happy about that.

Unfortunately I had to reschedule. Yeah!

BBQ Pot Roast

BBQ Pot Roast! Even though this recipe calls for you to use your oven you can use your slow cooker. Here’s the procedure:

Sear your roast off on the stove top and place it in the slow cooker on low for six hours or until done. (Or high for four hours or till done.) Put in barbecue sauce. Once the meat is done enjoy.

What to serve with your barbecue beef? When we lived in Florida there was a restaurant called Sonny’s and they served garlic bread with barbecue meat. It was awesome.

There are the classes of coleslaw, pasta salad, or potato salad. If you use dairy based dressings keep them cool.

Cobb Salad

This salad is so big it could be a meal. Yeah! The only cooking needed hard boiled eggs. Yep! That’s it.

Stores everywhere sell pre-cooked chicken. In one form or another. The seasonings vary. Friday I took a friend to Walmart found traditional and fajita. The price was horrific. About $16 for a pound or so. Oh dear God! Needless to say we left the chicken there. The rotisserie chickens are still fairly affordable compared to raw uncooked chicken. A third option would be store brand grilled chicken from the frozen aisle.

As I said, the only cooking needed is hard boiled eggs. For these there are a variety of methods to take. You can use the tried and true method. I personally like using my Insta Pot. Five minutes and done.

Romaine lettuce adds more nutrients to the salad. And crunch that you don’t get from iceberg lettuce. From here there’s tomatoes, corn, cheese. If you don’t care for blue cheese then you can use feta. Both cheeses have a saltiness needed for the salad.

This salad uses a vinaigrette as opposed to a dairy. That also makes this the perfect Summer meal.

Korean Style Char Grilled Chicken

https://www.marionskitchen.com/korean-style-char-grilled-chicken/

Yesterday I posted a lovely Thai Cucumber Salad. Here’s a grilled meat that it would go wonderfully with.

The flavors here are big and bold. This marinade alone sounds incredible. Gochujang pepper paste, ginger, garlic, soy sauce, green onions and sesame oil. This is the marinade. OMG! Sounds like a pool of delicious. Skin on and bone in. The skin will have a beautiful crunch to it. Who doesn’t love that.

What to serve with it? There so many options that could be served without dairy. The salad I shared yesterday is one option.

Thai Cucumber Salad

Heads up, peanuts. If you are going to a cookout check ahead for peanut allergies.

Cucumber salad is so simple. It’s cucumber, onion and sometimes tomatoes. Everything in your local store or Farmer’s Market or your garden.

Dressing. This dressing is perfect for Summer cookouts. There’s no dairy. The ingredients for this dressing are this: sigar, water, Thai Sweet Chili sauce and apple cider vinegar. That’s it!

What to to serve this with? Grilled chicken, pork, beef, or fish. You could serve it with Bahn Mahi Sandwiches. Or even on the sandwich. Why not?
