In this video Bev is using leftovers from their Thanksgiving. Oh yeah! Bev and ger husband Howie are Canadian so their Thanksgiving was last Monday 10/10.

Bev made a turkey and dressing casserole last Monday with roasted veggies. In this video she added a side of mashed parsnips and rutabaga.

Dessert was a pumpkin bread pudding. Bev used pumpkin she canned for the liquid part. Bread lart was bread cubes she made the bread and dehydrated it cubed. Bev topped it with pecans and pumpkin seeds. It looked good.

Casseroles For Busy Nights

I seem to have developed a theme for Thursdays without trying. I say this because I have been posting casseroles for Thursdays. So, let’s roll with it. The casseroles in the post like all casseroles can be made ahead and frozen. We’re going to look at the ones that stood out to me the most.

HOT CHICKEN SALAD CASSEROLE: First of all, it’s not a salad. You can add more veggies to it.

LOADED CAULIFLOWER CASSEROLE: Yeah! Just throw in what you would a loaded baked potato or mashed potato casserole. Couldn’t be easier.

BREAKFAST CASSEROLE: there are two here. One is a french toast and the other is hashbrowns with ham.

CATTLE DRIVE CASSEROLE: This is a great casserole to have on hand. It’s got beef, beans, cheese and salsa. Hello! Okay I added the salsa.

Here’s what we are seeing at Frenchtown Michigan Wal-Mart. I usually buy the large box of eggs during the winter so we don’t have to get out in a storm. On October 10th these eggs were $10.98 Yeah! Ten and $.98 bucks for sixty eggs. In one week they up $6. to $16.98… 😡😠🤬

I bought a bag of onions at Walmart for $2.09. That same bag at Kroger is $2.99. 🤬 I will stop here at let you watch the video.

Oven Baked Chops and Taters

Here’s a wonderful article by Nagi at Recipe Tin Eats. I’m so happy for her with the release of her cookbook. It’s awesome to see someone like Nagi get the publicity and reward for her work she deserves.

On to the recipe. You got savory and sweet with a balance of acid from Apple Cider Vinegar. Garlic is here of course. Soy sauce brings some salty. Worchester sauce bring a nice savory. Potatoes are absolutely divine. On top of that, one pan! Less mess.

Could it be frozen!!!! Why not? I think it would be a wonderful freezer meal. Or you could prep things like the sauce. Mix the sauce and freeze it then put everything in a bag together. Like a meal pack. You got the pork chops in a separate bag because they will be raw. Potatoes in one bag (parboil them before freezing). Then combine them together in a bag. Of course, you could freeze it cooked.

Here’s 50 wonderful Fall recipes. There are several that caught my eye. These are the ones I’ll talk about here. However, go to the link above and see what catches your eye.

BREAKFAST: Farmer’s Breakfast. Yeah! You got sausage, bacon, veggies, cheese and eggs. Hello! One pan! That means a quick easy clean up. Yes! It can be frozen. Kimmie Hughes from She’s In Her Apron has a similar recipe she freezes. Check her out on YouTube.

LUNCH: Chicken Cordon Blu soup. This would be a good soup. I never thought about taking Chicken Cordon Blu and making it a soup. If you don’t know what this is imagine a chicken breast piunded thin then having ham and Swiss Cheese rolled up inside the breast. Than put it through a dredging process then fry or bake it. Now this is a soup.

SUPPER: Chicken and Dumplings! I don’t know if it’s because I grew up in the South but I adore chicken and dumplings. The recipe here is definitely on my radar for tomorrow. I was going to make it anyway. Just switch up some ingredients.

DESSETS: Apple Pie Bar. Yeah! This promises to be delicious. It’s apple pie in a sheet pan instead of pie pan. I try doing this before Thanksgiving.

I have been hearing about it since I was in my teens and I’m fifty now. It’s just like George Carlin said if corporations can steal a couple of million they will solve everything. Here’s the electric blanket I use. I love this thing just oh my God it’s heavenly in the winter. Last year I paid between $80 and $90 for it because it’s a queen size. However much they are this year I promise it’s cheaper then it’ll be next year.

Thanksgiving Feast

It’s around the corner. Seriously! Tomorrow at noon October will be half over. I know that’s a scary thought. I am getting prepared for Thanksgiving now. I have been thinking about it since June. No kidding. The year has gone by that fast. Below will be what we have so far.

TURKEY BREAST: I got this the beginning of October. If you’re new to this blog here’s why. It’s usually just my daughter and myself for Thanksgiving. So, a whole turkey is too much. We end up giving the dark meat to a friend of mine whose homeless right now.

DRESSING: Growing up my late mom used to stuff the dressing in the bird. I loved it. Now it’s like what to hell was she thinking? It’s disgusting. I serve dressing on the side.

MASHED POTATOES: OMG! 🥰🤩 Mashed potatoes was the center of my childhood plate. With corn, turkey, stuffing, and gravy poured all over them. As an adult, I am putting MY mashed potatoes, turkey, corn and gravy in a bowl. What’s the difference between my late mom’s potatoes and MY mashed potatoes? She used the usual milk, butter and salt/pepper. I use salt/pepper, garlic powder, butter and cream cheese. Hello! No I don’t make these on an average Wednesday night. Holidays only. Gives us something to look forward to.

CORN: Delicious and simple. Open a can, salt and pepper. Simple and delicious. No point in complicating it.

CRANBERRY JELLY: As a child I loved this. As an adult not so much. However Antonia (my daughter) does so it’s going on a plate. We get Ocean Spray. Once a year so spring for the name brand.

PIES: Cherry was my late father’s favorite. Next to Apple. Mom would serve whipped cream from the frozen aisle. I love to warm the slice of pie and slap some ice cream on top. Heaven!!!

Do you have a game plan? I do. I usually keep appetizers easy. Cheese and crackers or chips and dip. Cheese could be a cheese spread or ball. We love Helluvagood French Onion dip. We don’t get it often because it’s so expensive. Thanksgiving, Christmas and Easter perhaps New Year’s. These are considered holidays so go all out and tighten the belt the rest the year. I’ll make things ahead that I can like mashed potatoes. Maybe. The ones above are so good that I have to set some aside for the feast. Pies can be made in September or during the Summer and frozen.

There’s always Ina Garten’s approach: make something assemble something buy something. Make your main meal of course. This is what guest are coming for. Appetizer board could be easy. Cheese cubes, veggies, fruit, or a cold or hot simple soup like egg drop soup. It’s light and it’ll warm your guess. Buy dessert. Find the common cake or pie that everyone loves and serve it.

There’s a chill in the air. That means Autumn is officially here. The last few weeks I have been posting recipes at least once a week dedicated to the flavors of Autumn. Cinnamon, sage, Star Anise and Oregano.

Autumn and Winter are usually when I do the most baking because it’s cold outside and running the oven is cheaper than baseboard heaters. And once the oven is finished we have something wonderful to eat. So to kick off baking season here’s a bread recipe from King Arthur as in King Arthur Flour. I have madeca similar bread to this one. It’s so easy. No kneading needed. Just mix the bread and place it in a cast iron pot if you one and wait for the majic. Meanwhile you can do the chores you need to.

What to serve this bread with? The choices are endless. I made chili for dinner and I keep thinking something was missing. This bread. That would’ve been heavenly. Soups or stews are great things to serve this bread with. This bread is awesome! It’s a great way to mop up every taste of your soup, stew or chili with.

If you are 45 or older chances are you ate one or all of these. Some may have been a staple side like potatoes au gratin. I as m going to do this post a little bit different than the last post on casseroles.

REPURPOSE LEFTOVERS: These casseroles are awesome because can take leftover protein like turkey from Thanksgiving and make Turkey Tetrazini. There’s the classic pasta bakes and the one casserole that everyone loves but does not know is a casserole LASAGNA. The dish that gets Garfield excited.

SIDE DISH: These casseroles are mainly things like scallop corn or potatoes. They are a great source of vegetables. Some also include grains like quinoa.

POSSIBLE DESERT: I came across a pineapple scallop and oh it got my attention. After reading I readized that the bread crumbs would be fine if they were say brioche bread crumbs. Pop some ice cream on top and oh my word. Seriously! Fresh out of the oven top it with ice cream. It’ll taste like it took hours to make. Only you will know the difference.
