Soups: Using Preserved Food

Soups and stews are a great way to use the food you have harvested. Even if you are using freeze dried vegetables you freeze dried, dehydrated or canned.

Speak of canning, most of these soups could be canned according to the time for the lowest acid food. So if you have beans in your soup, can for their time. Now the problem is this, beans have a long processing time. Which means your vegetables may be mushy. So I would can those separate.

Election Night Buffet

People across America will be watching news stations tonight as voting results come. If you plan on having like minded friends over why not make a night with a meal. My apologies. I just thought about this today. I personally am going to laugh at these lunatics having meltdowns on television. I can’t wait. Below will be my plan for our dinner.

APPETIZER: This will be cheese sticks. Oh yeah! We prefer the breaded as opposed to battered.

DINNER: Baked Pasta with Garlic Cheese Bread. I debated about this. Then I remembered Antonia has been wanting me to make baked Pasta. Here we go. Simple as can be.

DESSERT: I got Pepperidge Farm cookies. I NEVER BUY THESE! They are expensive. I did it today for reasons I won’t get into here on Scratch Kitchen.

Fall Cozy Soups

Here’s five soups that scream cozy. Put them in a slow cooker (favorite) or Insta Pot. Best of all is each soup is unique in its own way. The link above comes with links to each soup recipe.

MONDAY: Italian Bread & Tomato Soup (Ribolita) This is a vegetarian soup from the Tuscan Region of Italy. It has a lot of personality. Personally, I would leave the bread on the side to mop up the soup.

TUESDAY: Ina Garten’s Wild Mushroom & Farro Soup Ina Garten was has show stopping recipes. Rather she’s up dating a classic like Julia Child’s Boeuf Bourguignon. Ina always nails it.

WEDNESDAY: Creamy Chicken Potato Soup Cold weather and creamy soup just go together. This soup has a lot of flexibility to it. For instance you could use whit potato or a sweet potato.

THURSDAY: Caldo de Pollo Here we go South of the border. Okay! Our taste buds anyway. This soup is served in every Mexican home. Antonia’s dad use to make it during the winter. Florida does get cold during the winter. It’s just not the intense as the Northen winters. He’d make this with different squash and no avocado.

FRIDAY: Insta Pot Butternut Squash Soup This is a beautiful soup. Butternut squash has a very mellow taste. It takes to any flavors you put with it.

I am going to take a few days and let the rest of the people here have their say about the “Civial War” in America. People have been predicting another civil war in America for years. Yet it hasn’t happened. I don’t see it happening.

Have you looked around lately? I mean take an honest look at Americans. I have and I don’t see a civil war or any other kind of war happening.

DIY Holiday Hot Pot Party

With winter on our heels and potential for brown and/or black outs here’s something you could do easy. I am going to break down in prep stages.

MORNING: The morning you know you’re having guests and outages here’s what you can do. Obviously prep the veggies and meats that need to be cut. Make you suops in a slow cooker so you can put them in buffet set ups.

AFTERNOON: Make sauces after you confirm how many guest are coming. If needed prepare blankets or ask them the bring their favorite blankets. And if they have extra candles or kerosene lanterns ask them to bring those as well.

EVENINGS: Before your guest show up prepare the dinning area. This way if there’s a brown out or blackout before or during the meal you and your guests are ready. That and let the compliments roll in.

Even though we are facing brown and/or black outs, we can still have guests over.

Czech Beef Goulash

Goulash is one of those stews that seems to have endless variations of. The thing that’s consistent is the size of the meat and sausage. Oh yeah! Now let’s look at this Goulash closely.

MEAT: Usually beef is the most common ingredient. The main thing is to make sure the beef (or whatever else meat) is uniform as possible in size. Why? The uniform size will make sure every piece is cooked evenly and thoroughly. Sausage cane be smoked or not. Spicy or not depending on you and your family’s taste.

SEASONINGS: The usual suspects are used here. Salt, pepper, cumin or oregano, and swert paprika. And garlic. Also some recipes call for beer instead of water. It will add more flavor then water. Beef broth.

Important steps in making Goulash is to season the meat and brown off the meat. By doing this you seal in juices and flavor. Brown off the onion and garlic. The add broth and beer or water.

Creamy Herb Turkey Soup

The first time I had this soup was in 2012 while my mom was in the Orlando South Hospital. This soup was like Thanksgiving in a bowl. It took years to find this copycat recipe that actually tasted exactly like the soup from Sweet Tomatoes restaurant. Now let’s look at this delicious soup.

HERBS: I just use poultry seasoning. It’s what I use on the bird. Consistency my friends.

TURKEY: Use the leftovers you have.

DRESSING: I love having this soup over leftover soup.

CRANBERRY: I’m not crazy about cranberries. If you like them, go crazy.

Turkey Stuffing Roll Ups

I am sharing this today about three weeks out from Thanksgiving. I look at people across America who may not be putting a big bird on the table this year. Rather the bird is out of your budget or you can’t find one in your area here’s an alternative solution.

This casserole isn’t the usual one I’d be posting today. Now let’s break the casserole down snd look at how to make it affordable.

TURKEY: You could use sliced turkey from your local deli. Get the turkey sliced at .o5 or one inch thick. This way it’ll roll up without ripping.

STUFFING: Use what you and your family like. This is the one day of the year I say buy name brand if you desire.

GRAVY: If you can make gravy great go for it. Otherwise buy your family’s favorite brand.

MASHED POTATOES: We are going to get four potatoes and I make them with cream cheese, salt, pepper and garlic powder. No this isn’t your Wednesday night mashed potatoes.

GREEN BEAN CASSEROLE: Not every family loves this. My daughter despises it and I love it. Try having green beans as a side.

SWEET POTATO CASSEROLE: Again this is a hit or miss casserole. I grew up with candied sweet potatoes. I love them. Try having a baked sweet potato instead of a casserole.

ROLLS: For years growing up my mom got the brown and served them. I didn’t care. Until the first time I had King’s Hawaiian Rolls. Hello! We’ve been having them every since.

I hope this gives someone somewhere hope for a delicious meal on Thanksgiving. My daughter has decided that we will no longer call Thanksgiving. It’s going to be called Food Day. I there.

The harvest time is done. Now it’s time to use it. Here are 15 recipes for that. All you need to start them is onion, bell pepper, garlic and herbs. Below will be the ones that stood out.

TACO STUFFED SHELLS: This will be the last one. Tacos are a favorite of pretty much every family. There is a layered taco salad here but this stood out. It’s tacos stuffed in a shell. Sign me up.

Chili’s Copycat Recipes

When we lived in Florida, we were frequent guest of Chili’s. The Southwestern Eggrolls, Quesadillas, and Fajitas… I miss these so much. We have an Applebees but it’s not the same. Below are my favorite items from Chili’s. What are your favorite items?

APPETIZERS: Cheese sticks. I don’t know what they do with the breading but it’s awesome. Southwestern Eggrolls. Spicy cheesy and just incredible. Quesadillas could easy be a meal by themselves.

LUNCH: Broccoli and cheddar soup is incredible. Cesar Salad is hearty. Their burgers can stand their own ground. Fries were always crispy. Fajitas are my go two. Seriously!

DINNER: Again, Fajitas are incredible. Their chili wasn’t anything to sneeze at. Their pasta meals are always a hit

DESSERT: Skillet Chocolate Chip Cooking. Hot baked fresh topped with ice cream. Or Molten Chocolate Cake. Oh my heaven.
