I have fond memories of this open sandwich. Hot gravy poured over turkey layed on bread. Okay! So I didn’t grow up with dressing in the mix. However, don’t think that will stop me.

I hadn’t thought about this Mexican brillance… Yeah! It’s brilliant way to use up dark meat. If you’re not sure what is on a carnita below will be a run down.

A carnita is refried beans, meat, and cheese with sour cream and salsa or pico de gallo on a flat shell. That’s it. Carnitas are a great way to use leftover meat. Along with tacos, burritos and taquitos, are always a favorite.

Beyond that, you decide. Personally, I would use the white meat. Just because we aren’t huge fans of dark meat. As for refried beans, use your favorite. Salsa or Pico De Gallo? Your carnitas is your choice.

Thanksgiving Options: Potluck

This year has been a hell of a year. We’ve had WW III go into full swing, inflation, shortages and layoffs/hiring freezes. So this week we have looked at options for Thanksgiving.

Growing up my parents used to take me to church and often there’d be a pot luck. So it has inspired me to suggest this. A pot luck would be a great way to have the feast you’re accustomed to having on Thanksgiving.

How to decide who makes what? That’s the easy part. We all have that relative that makes the best whatever dish at Thanksgiving. Have them bring that dish. Everyone put in for a protein. You take the cost of a bird or ham divide it out across everyone, that will drop the cost dramatically. For those who couldn’t cook to save their life, they can bring things like chips and dip, cheese board, or a dessert and paper products.

Here’s a less expensive option to turkey! How? You can get a small ham and feed a your family on Thanksgiving. There are those who don’t like turkey. I know! Just bizzar, right.

For those folks, here’s a post for you. Growing up we had Ham at Christmas. Celebrate the birth of a man would never touched pork… I never understood that. Then and New Year’s Day.

What to serve? Same as you would with a turkey. Mashed potatoes, pork dressing, corn, green beans (or casserole), rolls and sweet potatoes. With gravy of course.

How many of y’all use the whole turkey? We don’t. We mainly have the breast meat. So a year or two ago I started getting just the breast. It’s gone with in days.

As I said in yesterday’s post, I am posting these articles this week because Thanksgiving is next week. I know people are going to have to decide between a meal or electric. I am trying to put out less expensive options.

A turkey breast can be less expensive than the whole bird. Use the same seasonings and cut the baking time down. That is it. Serve everything you and your family likes.

With Thanksgiving around the corner, Americans face a serious problem; inflation. Inflation is driving the cost up so high that many families may not have a large feast for Thanksgiving. It breaks my heart to think about that. So we are going to look at possibly dinners that give the same flavors with less cost.

Our first post will be this one. Turkey Meatballs in Gravy. The meatballs have ALL the flavors we put on a turkey, just in a ball form. I came across a similar video on Pinterest and got inspired. I am also watching Rudy aka Alaska Prepper (YouTube). He always inspires me.

What to serve with the meatballs? What do you usually have at Thanksgiving? Mashed Potatoes, dressing, corn, green beans (or green bean casserole), and sweet potatoes. Rolls! Remember, it’s still a turkey dinner, just different form.

With Christmas around the corner, perhaps now would be a good time to start thinking about giving gifts of food. Not just the sugary seasonal things, but also healthy foods like fermented foods. The link above takes you to fifty wonderful recipes to start with.

The first thing I ever fermented was kraut. I grew up with my late mom fermenting pickles and kraut. We had a ceramic crock. This thing was huge. Or so it seemed to me as a child. There’d be this odd sound coming from there. Then there was this awesome kraut or dill pickles. Below will be a highlight of the recipes.

DRINKS: Over the last ten years or so we’ve seen this insane push for Kombucha, Kiefer and Kavass. You can make so many drinks with the fizz comparable to soda.

DAIRY: You read it right. You can make milk, cheese, or yogurt with fermentation. That’s just the start.

VEGGIES: Veggies can be perserved by fermentation. It’s a great way to produce pickles of all kinds.

FRUIT: You thought fermenting was limited. Think again. I have made fermented apples. They are excellent as a treat. Slightly sour and sweet.

Here’s forty awesome Church Potluck recipes for pasta. When I first saw the title it was like ‘another pasta post’. Then I read it. Below will be what caught my attention.

CANNED SAUCE: Yep! Home canned pasta sauce…

BAKED PASTA: We’ve been obessed with baked pasta. It’s all delicious. With or without meat.

BREAD: There’s a unique loaf here with bacon in it. I don’t know about that one. Garlic bread I know I could go for.

REUBEN: If you like the Ruben sandwich this might be your thing. Here’s the modifications I would make. Replace corned beef with two types of pork. Drop the kraut for dill pickles. Also, a swiss cheese like Gouda. You got me. Cuban sandwich twist on the Ruben.

FRENCH TOAST: I grew up eating French Toast. Never did I imagine turning this into a casserole. Never mind such a thing as breakfast casserole.

STUFFED PEPPER CASSEROLE: My late mom used to make stuffed peppers. I hated them. This has potential. You can change out the peppers. And seasonings.
