Crofton Jars Made in China

If you have bought the Crofton jars, please return them. They are made in China and China tends to use lead in their glass products. Below will be photos of the jars I took while in Aldi’s and the video will be linked below as well.

This is by no means to be an insult to the Chinese people. I understand that the employees have no say over the quality of products they just make them. I get it. They have to work a job rather they like the quality of the product or not. We have the same issue here in America. You can go to the link below to see the pics. The youtube link will have the video.

Pressure Canning Safety

This is a video I did for my other channel Anarchy Land on pressure canning safety. I review essential information on pressure canners. They can be use for cooking as well as canning. I will include a link to the canner I have and a couple of books that are essential to have.

Pressure Canning Safety

Here are the links to the canner and the books. Wal-Mart.com does have the prestos with the gauge. I am giving you the link to the one I have.

Mac and Cheese

This is one of my favorite things to make. It’s easy and straightforward. Pasta and cheese. Cheese Sauce 1 Tbsp. Butter 1 Tbsp Flour 1 cup of milk block of cream cheese, cheddar cheese Mix the butter and flour together. Add milk once the butter and flour are combined. Add cheese. Melt all cheeses together. Salt and Pepper to your family’s taste. Add pasta once it’s cooked al dente mix cheese sauce and pasta together.

Weekly Menu

I am going to try to start posting a weekly menu on Sunday’s from here out. I have a light cooking schedule in the summer because it’s hot. Even in the Winter when I will do the bulk of my cooking I space it out three days of cooking and four of eating up leftovers and then clean out fridge day is the last day for leftovers of that week then they are out the door. Here is how we manage our weekly menu.

Pantry Challenge: This is a meal from our pantry. We don’t eat out often if we don’t have a coupon, it’s a no go. Then I will set aside one day for Antonia my daughter to cook. That day will have Ani written on it.

MYOTO (Make Your Own Take Out): Who doesn’t love Rachel Ray? This was her best idea ever. Making meals at home that you enjoy having out. It’s easier than you think. Utilize Pinterest.com. There are so many recipes there for favorite commercial recipes. And they are free. Who doesn’t love free?

Clean out Fridge: This is the last day for leftovers from a week. That’s it if it’s not eaten by this day, that’s it. That leftover is gone.

Breakfast for Dinner: Here is a fun meal to do with kids. It gives them some kind of ownership over their meal. Think pancakes, waffles, scrambled eggs, biscuits at dinner instead of breakfast.

Pizza night: This is twice a month here. I prefer to make my crust. I did a video about a week or so a go on pizza crust. Okay, more of what not to do with crust. Stretch it to far with two separate uses. I promise I do know what I am doing.

Apps for Dinner: This is another fun dinner idea. Let your kids help choose which apps to make and how to make them. Grill or oven. That is the wonderful thing about summer. You can use grills for everything you do in a oven.

Last Part of Assignment

Alright, I just turned it into the writing center to be reviewed. Monday I will get it and make the recommended revisions. I am so relieved this is my last class.

I have been doing this for four years. Now I will be devoting more time to these blogs and vlogs. I truly look forward to that. Closing one chapter in life and opening another.

Last Assignment

This weekend I will be putting in some serious time on my last college assignment. Yeah! I graduate as of Monday, August 12, 2019. I can’t believe it. I feel like I have grown over the four years I have been doing this. I never thought I would attend college never mind graduate. The internet is a wonderful thing in that matter. It gives people the opportunity to get a degree in anything.

It has been challenging. Without a doubt… The algebra was awful. I had to do two class on this. I did them back-to-back so I wouldn’t forget what I learned in Algebra I when I did Algebra II. I am absolutely thrilled I will be done on Monday because I can focus on content and research for content.

Also, I will have time to find new and interesting dishes to make on Scratch Kitchen. I will be taking three days to work on the assignment.

Canning Projects

Alright guys, this blog and video will be on the canning projects which I will be doing over the weekend and I will be showing how easy it is to can your own food. At least as much of your own food as possible.

This canning project will be Four One Pot Sauces. These are going to replace the beef helper you buy at the store. What you get now is less than what we got when I was a kid and you pay more for the name brand. These sauces will give you the same dishes for less money and more quantity of product.

Sauce Number one, Pizza or Pasta meal. We all love lasagna, spaghetti, and the pizza helper. This one sauce will give you either of them. Just add pepperoni for the pizza or curly fancy pasta for the lasagna. Store brand of pepperoni and pastas of course. Source: Ball Complete Book of Home Preserving pg. 366.

Sauce number two, Sloppy Joes. Who doesn’t love sloppy joes? They are cheap and it can feed a crowd. On a burger roll or crusty bread. I have seen sloppy joe casserole with tater tots on top. Hello! Yes I will be trying this real soon. Source: Ball Canning Back to Basics pg. 154.

Sauce number three, Enchilada or Taco. Again, this sauce can be used two ways. I love these sauces. The variation in how you can use them is up to you and your family.  The beef helper has a enchilada, taco, and nacho meal. Take your pick here two. Source: The All New Ball Book of Canning and Preserving.

And saving the best for last, Barbecue sauce. Yes! I am a Southern Girl and I love my BBQ. I going to get as close to the Sweet Baby Ray’s sauce as I can. Again, you can use this sauce in a variety of different ways. Use it for sloppy joes, pulled meat, the choices are endless. Source: Ball Complete Book of Home Preserving pg. 260.

Apple Pie Jam Croissants

Below is the directions and serving suggestions.

The recipe for the Apple Pie Jam came from Ball Canning Back to Basics book page 48. It’s delicious. This would be great last minute dessert idea because it’s quick and easy. Make sure you keep the directions on the croissant roll. You will need them for cooking time. If you use a toaster oven you will probable have to turn them around and finish cooking them. Simply put the filling in the croissant. Just put a 1/4 tsp in the larger end and proceed to roll as usual. Put your oven at 350* (I don’t know what it is in Celsius). If you need to rotate them around add 5 minutes at a time.

Ideas for serving: with ice cream straight out of the oven. You could use a chocolate sauce or sauce of your choice.

Pasta and Pizza Sauce

Alright y’all, here is a simple pasta and pizza sauce I use. If you are lucky enough to have a garden, great. Use everything you have and want to use. This is a basic sauce. We live in an apartment complex and they don’t allow residents to have gardens. I go to Aldi’s for everything. I can’t buy tomatoes, process them and cook them for $.85. The sauce I have to get at Wal-Mart. Honeslty, Great Value has a good sauce for $.89.
