Recordings for This Week

This week I will be recording the Taco Salad to show how we use what I can.

Taco

1 lb ground beef (ground meat of your choice) 1/4 cup of Ortega Seasonings (this is what we use. Use what your family likes.) Brown the meat off as usual and drain if needed. Mix 3/4 cup of water and seasoning together then place in meat. Simmer till desired thickness.

Here is one thing I have added to my salads, crumble tortilla chips in the bottom. Top with what you like and enjoy.

Menu 9/30 to 10/05

Our menu for this week is going to be easy. I am still recovering from a cold and I appreciate y’all not giving up on me. I will record as much as possible. I have scheduled a session for the Pullman Pan for next Tuesday.

Today

Leftover Lasagna. I keep two pieces out because I knew we would have them again. Obviously, I didn’t take in account when I planned the same thing for Saturday. Antonia works part-time at a local grocery store as a courtesy clerk so she’s working in the evenings and it’s just me for dinner.

Tuesday

Tuesday is going to be our eat out night with a coupon from Burger King… I know it’s not good for you but this is the only night in a month we do this. Otherwise we eat at home.

Wednesday

Pizza… Who isn’t up for pizza in the middle of the week. Hello!

Thursday

I will be using the ground beef I canned up back in the winter.

Friday

Apps for Dinner. This is a fun idea I had for dinner a couple of years ago and we still do this.

Saturday

As I said above it will be just me for dinner and lasagna will be on the menu.

Pullman Pan

I love a good loaf of bread. The problem is getting is using regular bread for sandwiches. Doesn’t really work that well. About a year ago I saw my girl Heather over at The Kneady Homesteader use a Pullman Pan. Okay, I was hooked as soon as she explained how the pan worked compared to a regular pan. The Pullman pan lets air circulate from the bottom which is why there are holes in the bottom of the pan.

Day 2 Round 2

Alright last night was brutal. I didn’t sleep much. My daughter likes having a fan on and it bothers my sinus. For a bonus, our little dog was pickled with fleas. Yeah! One if those nights. 😳 Anyway if I can’t kick this cold by the end of next week, I will be seeing a doctor.

Lasagna

I just made it and it’s cooling on the stovetop. It’s divine. I love it, but I don’t make it often. Maybe twice a year. Or on birthdays.

I will take you through the process of making the white sauce and red sauce with meat. I used ricotta and talked about my late grams (maternal grandmother). She uses to make a pan of lasagna that could feed a third world population with leftovers. They would have neighbors over and everyone would bring something special. One neighbor would bring bread, salad, side dishes and one neighbor would bring deserts. It was a community friend getting together for a meal after a days work.

I wish I could have been alive during those days when communities would come together and share a meal. Talk to one another and watch out for each other’s children. They didn’t worry about predators. Grams would make a pan of lasagna that took up half of the middle of the table and garlic bread that was unbelievable. Of course, once garlic cheese bread was commercially available she used it. I guess that made life a bit easier. I will be putting the video up tomorrow and I will post it here then.

Pull Apart Bread

For this video I used a recipe from my bread maker’s cookbook. However, as always, Pinerest.com to the rescue. I found a recipe that is very close to the one I used. I will leave a link below for the video and a comparable recipe. These were so good. Since I baked the bread in my cast iron pan, the bottoms and sides were crispy. It’s awesome.
