Eady White Bean Salad!

We’re getting closer to Tuesday. I can’t believe how fast this year is going by. WOW! It seems like the more mayhem in the world the faster time passes. Below is going to be another wonderful salad you can use for Tuesdays BBQs which doesn’t contain dairy. Remember, dairy based dressing need a lot of cooling to keep them from sending guest to the ER for illnesses. So for summer time, oil and vinegar based salads are safer. Of course, they need to be cooled too in a cooler and/or ice.

BEANS: This salad has three types of beans. I do think that is the main thing. The recipe calls for navy, cannellini (Italian kidney beans), blacked peas If you can’t find the cannellini beans you could double the navy.

VEGGIES: Now the veggies. Bell peppers, celery and onion. Along with parsley.

VINAIGRETTE (DRESSING): Remember, we are focusing on none dairy based salads. This vinaigrette calls for olive oil. I say use it if you have it. In this vinaigrette, use what you have.

Here’s another potential salad for Tuesday’s cookout. How? Easy.

You going to follow the basic recipe for this dish. What’s going to make it a salad is you will use veggies that have gone through a spiral cutter. 🤩 Yeah! You can buy them done in produce if you don’t have a spiral cutter. You can any veggies your local store has. Now you may want to add noodles at the last minute because you will have to add more dressing.

There’s another salad or you could leave it as is for a side dish. No dairy.

Din Tai Fung Cucumber Salad

This is a beautiful Asian salad. It’s a nondairy salad. Let’s look at the ingredients.

CUCUMBERS: Persian or pickling will work. Or perhaps baby cucumbers. That’s it. You could add bell peppers. Just make sure everything is similar in size. There is a fresno chili but you could use what you can find. Of course, your tolerance for heat should be figured in.

DRESSING: Rice vinegar, sugar, mirin, sesame oil, garlic. Of course, sald and pepper.

SERVE: Chili oil, sesame oil, fresno (or what you can find and tolerate) pepper.

This sounds like a delicious salad.

Marinated Cucumber, Tomato and Onion Salad

Yesterday I guess I started posting salads and sides for the 4th of July. Anyway, here we go.

CUCUMBERS: Use the ones you like. Peel or not to peel… The age old question. Each to our own.

ONION: Slice it in rings. Personally, I’m not a fan of raw onions. You could soak them in water to help reduce the raw texture.

TOMATOES: Use the tomatoes you like.

VINEGAR: Use what you have and you like.

SEASONINGS: The usual suspects here. Salt, pepper, basil and parsley. Oil again, use what you have.

Week to the 4th of July!

Next week is ine of the biggest grill days of the summer. So we are going to review a few safety things. I am sure you know these. I used to get so excited for the grilling and often forgot basic safety.

1. Fire extinguishers! Who knows how many fires happen on the 4th? Seriously! I lose track. I recommend keeping at least four at hand. Close enough that two steps and you’ve got one.

2. Wild fire alerts! Be alert of wild fire risk. We’ve been experiencing issues with smoke from Canadian wild fire smoke. Just be aware of the risk of spreading a fire. Also, be aware of drought related fire risk.

3. Fire works! We have that neighbor who thinks he’s an artist with fire works. The guy can barely get out of bed without tripping over lint but he’s a pro on fire works. 🙄🤨 Make sure you have a fire extinguisher close and 911 ready to be called.

4. Food safety! Here’s another biggie that sends people to the ER. If you can make a salad without mayo or dairy products awesome. Kroger’s has a spaghetti salad that is awesome and there’s no dairy. There are many salads and dressings that don’t have dairy and won’t have any left. Like Olice Garden’s salad dressing! Hell yeah! It’s just as good as what you get at the restaurant. Vegetable trays are awesome for BBQs. Baked BBQ Beans!!!!

5. SERVE DAIRY PRODUCTS LAST MINUTE! Sounds like contradictory. If you are hosting or attending a BBQ at someone’s home, than place your salad with dairy based dressing in the fridge and bring it out at the last minute.

Store-Bought Quilt Hack #1: Make Easy Placemats!

I came across Tim’s channel yesterday. I wish I had found it before I did. 😝 Why?

Yesterday I made a hot pot mit. It came out okay. I did the quilting stitch to keep the insulated batting from shifting around. I going to make more before I do a video on it. Tim shows how to put biase tape on a project the easy way. I didn’t the hard way. Yep! I’ll say it again, I should’ve found his channel sooner.

Weekly Reset!

Yesterday I did something I had seen all over the net. A weekly reset. You clear out your fridge before cooking a new meal. It was quick and easy. It also freed up dishes. My only question was, what took me so long? Honestly I don’t know.

There are many youtubers who do this. Just search Weekly Reset and you will be surprised by the results. It doesn’t have to be this big production. We aren’t talking ablut an all out s rubbing. Once a month is good enough for a scrubbing. Once a week go through the fridge and get rid off leftovers that are left because you and/or your family is over them. If it’s soup, freeze it. Or can it.

Cold cuts. Sandwich bar. Last one. Well for that week. I think you get the idea.

Russian Potato and Mushroom Soup

I am posting this to show support for these folks. Last night one of their own tried to carry out a coup. This could’ve been devastating for the citizens of Russia. Below we will be looking at this lovely soup.

VEGGIES: Carrots, mushrooms, potatoes, celery and onion. This is a basic start to any good soup. I almost forgot leeks.

SEASONINGS: Bay leaf, dill, salt and pepper.

LIQUID: Chicken broth you always use. Before you serve add in half-half.

This picture caught my eye. Ribs, steaks, chicken, and veggies. While you have the grill going, put some grilled meals in the freezer. Below will be the things that caught my eye.

GRILLED STEAK: The grill marks are beautiful. Fat is cooked very well. Ensuring the meat will be delicious and moist.

GRILL A WHOLE CHICKEN: This chicken looks beautiful. The first step to cooking chicken is to brine it yourself. It’s cheaper and you can choose the seasonings. Tie it up (truss).

RIBS: There’s no shortage of ways to make ribs. My favorites are smoked or crock pot.

VEGGIES: Corn on the cob cooked on the grill is devine. And potatoes baked on a grill is in credible.

DESSERTS: You read that right. You can grill dessert. In the link there’s directions for pineapple with brown sugar rum glaze served with ice cream.

Feed A Crowd Thursday!

Yesterday wasthe first day of Summer. That means three meals a day you’re feeding your kiddies. This week is Jamerrill Stewart whose the Queen of feeding lots on a budget. Below will be somethings I could see kiddies enjoying.

SANDWICHES: Sandwiches are usualky cheap to assemble and they can be customized for each child. Jamerrill has directions to make Homemade Uncrustables. If you freeze these put peanutbutter on both slices of bread. These frozen griddled cheese sandwiches. So easy. I know you’ve seen them in the freezer. DON’T BUY THEM! Make them. Leave mustard and mayo off till time to eat. Pinwheels could fall under this category as well.

SOUP: Yeah! Making a quick pot of soup couldn’t be easier. On top of that, you can make it anyway you (and/or or kiddies) like. Change seasonings and you can explore any cuisine.

SHEETPAN MEAL: These can be done quick and easy. And they can be done on your grill and frozen for later.

Here are just a few ideas. I certainly hope they help.
