Eady White Bean Salad!

We’re getting closer to Tuesday. I can’t believe how fast this year is going by. WOW! It seems like the more mayhem in the world the faster time passes. Below is going to be another wonderful salad you can use for Tuesdays BBQs which doesn’t contain dairy. Remember, dairy based dressing need a lot of cooling to keep them from sending guest to the ER for illnesses. So for summer time, oil and vinegar based salads are safer. Of course, they need to be cooled too in a cooler and/or ice.

BEANS: This salad has three types of beans. I do think that is the main thing. The recipe calls for navy, cannellini (Italian kidney beans), blacked peas If you can’t find the cannellini beans you could double the navy.

VEGGIES: Now the veggies. Bell peppers, celery and onion. Along with parsley.

VINAIGRETTE (DRESSING): Remember, we are focusing on none dairy based salads. This vinaigrette calls for olive oil. I say use it if you have it. In this vinaigrette, use what you have.
