Din Tai Fung Cucumber Salad

This is a beautiful Asian salad. It’s a nondairy salad. Let’s look at the ingredients.

CUCUMBERS: Persian or pickling will work. Or perhaps baby cucumbers. That’s it. You could add bell peppers. Just make sure everything is similar in size. There is a fresno chili but you could use what you can find. Of course, your tolerance for heat should be figured in.

DRESSING: Rice vinegar, sugar, mirin, sesame oil, garlic. Of course, sald and pepper.

SERVE: Chili oil, sesame oil, fresno (or what you can find and tolerate) pepper.

This sounds like a delicious salad.
