Kabob Koobideh (Minced Meat Kebab)

In honor of the Iranians finally finding economic trading partners, I going to leave this post with kabobs. Because it’s summer and this is one more thing you can cook on a grill and not your kitchen.

What is this and what is served with it?

First let’s talk about the labobs themselves. It is minced meat (almost ground) and it’s seasoned very simply with onion, salt/pepper, tumeric and baking soda (optional) mix these together. (I would let this mixture set a while.) Then wrap it around metal skewers. Then grill and enjoy.

Serve Baghali Polo (Persian Dill Rice) and Barbari Bread. Veggie kabobs are welcomed to this party.
