I love these lovely little bites of creamy yumminess. Next weekend is Super Bowl Sunday. I am not a fan of sports. I do have wonderful memories of my late father’s youngest brother and his wife coming over that weekend. This up coming week we will look at ways to have a party on a tight budget.
DEVILED EGGS: Deviled eggs can be done is so many ways. Change out a few seasonings here and there they get a completely different flavor.
MAYO VS SALAD DRESSING: My mom used which ever was on hand or on sale at the store. Brands weren’t a big deal in my house growing up. They’re not important now either. Personally, I go for mayo. The sweetness balances the vinegar bite from the mustard.
SWEET PICKLE VS DILL PICKLE RELISH: Dill relish was an absolute for my mom. Again you have balance the flavors of sweet from the mayo and vinegar from the mustard. So you don’t want to go too sweet or sour on the relish.
SMOOTH VS LUMPY: Now we cone down to the filling. I like a nice smooth filling. Putting the egg yolks mayo and mustard in a food processor will get you a beautiful smooth filling with just enough relish liquid for flavoring. Of course, I like salt and pepper with a bit of garlic powder.
SPOON FILL VS PIPPED FILLING: What to hell am I talking about? Years ago I watched Paula Dean pipe yolk filling into deviled eggs and I have been a fan of this method every since. She also uses an extra egg to make sure there’s enough filling for each egg. My mom would use a spoon. I have and do still use this method. I just prefer the pipping better. It’s nore work but the presentation is far better than spoon.
TOPPING VS NO TOPPING: My mom used a lght sprinkling of Papricka. Personally, I don’t care. Top them or not. It doesn’t really matter. I do advise putting more effort into the presentation of the eggs if you’re going to skip topping. Place them on a nice platter that goes with your event.
