We are roughly a month away from Christmas. So, for the next few Tuesdays upt till Christmas we will explore ideas for budget friendly meals for Christmas that will be delicious. Christmas itself should be about the birth of Jesus not about useless stuff and credit card bills that never end. Below will be items that stood out to me.

POTLUCK SAUSAGE CASSEROLE: this casserole is packed with flavor. It has pasta, sausage, veggies and cheese. It’s like lasagna without the layering.

SPICED SALMON: This might be on the pricy side depending on where you are. I do have ideas for less expensive option. Mahi Mahi is a beautiful fish and would hold up well to these seasonings. Trout, flounder and catfish would be good choices as well.

CIDER-GLAZED PORK TENDERLOIN: This glaze is simple and sounds delicious. I’m sure you could use chops in place of tenderloin.

GARLIC CHICKEN WITH HERBS: This uses chicken thighs. You could use skin on if you choose. Just make sure you brown the skin real good. Beyond that enjoy.

DANISH MEATBALLS WITH PAN GRAVY: This would be a cool way of having beef and pork for Christmas. It’s not the hum drum meatballs.
