Carnitas!!!!

I hadn’t thought about this Mexican brillance… Yeah! It’s brilliant way to use up dark meat. If you’re not sure what is on a carnita below will be a run down.

A carnita is refried beans, meat, and cheese with sour cream and salsa or pico de gallo on a flat shell. That’s it. Carnitas are a great way to use leftover meat. Along with tacos, burritos and taquitos, are always a favorite.

Beyond that, you decide. Personally, I would use the white meat. Just because we aren’t huge fans of dark meat. As for refried beans, use your favorite. Salsa or Pico De Gallo? Your carnitas is your choice.
