Quick Hainese Chicken and Rice

I have made this dish before. It’s a process. But this version by Pai is awesome. It’s quick enough for a Wednesday night. Also, easy enough for a Monday night.

Why is this version different? You are using pieces of the chicken rather than a whole bird. Also, you simmer the chicken in the same pot as the rice. Yeah! It’s a one pot meal version.

I’m going to make this version over the weekend as long as we don’t get surprised by early morning shifts at Ani’s job. Iam going to say this, rinsing the rice is absolutely essential. I know it’s one more step.

Here’s my personal tips for this meal. First, prep the the chicken ahead and make your stock. It’s time consuming but worth it. While you’re at it go ahead and prepvyour sauce all but the cilantro. Cilantro is something you want to add right before using. Secondly, rinse your rice early in the week.
