As an American I never had pork belly in any other form but bacon. I love good bacon. Marion Grasby has opened my eyes to other uses of pork belly.

This recipe is one of those uses of pork belly that has made me think twice about pork belly. Marion marinates the pork belly with bitters. If you are one of these people who entertain a lot than here’s another use that bottle of Angostura Aromatic Bitters. At $14.70 (Amazon.com), it had better have more than one use.

After marinading the cut pork belly for a half hour, brown it off and then add marinade with onions to simmer till onions are tender and sauce is thick. In this video Marion serves pickled carrots with it.
