Greek Cucumber Salad

Here’s another salad perfect for summer cookouts. It’s got a lot of vegetables. You could add pasta. The dressing is vinegar and oil based.

Let’s look at the veggie line up here. Black olives add a nice meaty texture. There’s cucumbers which I would recommend one that doesn’t have a wax exterior like the usual. But if that’s what you use it. Red onion and tomatoes. Fete cheese!

Dressing elements are next. Lemon juice, vinegar and olive oil. Then we move on the the herbs. If you do a lot of Italian or Southern French cooking than you may already have oregano. Beyond that it’s salt and pepper. Simple as can be.

Dairy products won’t be missed.
