Chili Oil

This condiment has a huge personality. With chili peppers, star anise and cinnamon how can it not have a huge personality.

Simple to make. This couldn’t be simpler to make. Amelia Rampe gives two varitions for this oil. Garlic and shallot. Yes a shallot instead of onion. The shallot has a different flavor than an onion. It’s smaller and more intense flavor and scent.

Keep in mind if you can’t get your hands on fresh or dehydrated peppers than using powder is okay. Just give a little toasting and you’re good to go. Next is the oil. You don’t want a strong oil like olive or sesame oil. Go with a light oil that let the shallot, garlic, peper, star anise and cinnamon to shine.

Low slow simmer will infuse the ingredients and the oil. Your house will smell delicious…
