An Ode to Cream of Mushroom Soup

Sara Bir, like myself grew up eating cream of soups in casseroles. I say cream of because there are many versions now. It used to be cream of mushroom soup.

As Sara says in this article cream of soups are just concentrated flavored bechamel. Here’s how to make a fream of soup. Equal parts flour to fat combined together and add milk or heavy cream. Than add your flavoring, mushrooms, celery or chicken. That’s it. Done!
