I dropped myself down a rabbit hole today. The whole AP (all purpose) flour, Cake flour and Pastry Flour. This article explains the difference. It also shows how to substitute cake and AP flour to get pastry flour.

I am going to do some experimenting with these flours. With cost of everything going through the roof it’s this skill going to be needed.
