Growing up in the South there was Pimento Cheese everywhere. Seriously! Everyone had their secret touch that either made the spread or killed it.
Usually we just spread on bread. It’s sweet from the mayo spicy from the hot sauce. Personally, I would smoked paprika instead of hot sauce. I just like the smoky flavor. Perhaps cumin for a nice earthy flavor.
That’s the great thing when you make stuff from scratch, you can change things as you choose.
