I grew up eating potato salad. A great potato salad has a beautiful harmony of sweet, tangy, and a little bit from mustard.
It’s got chunks of potatoes with a creaminess from mayo. I don’t care what mayo you use. Honestly, I don’t care. All the flavors in a great potato salad is so incredible regardless of the brand of mayo. The apple cider vinegar provides a tang that is delicious. Personally I love a bit of sweet relish in mine.
My late mom’s family lived in Western New York where there was a few Amish communities that spilled over from Pennsylvania. Their food is so simple and delicious you don’t miss extravagant seasonings.
