Here’s another wonderful article a out Chinese cuisine. These recipes made me drool. This article goes into the history of Chinese Cuisine in America. Plus it gives links to other articles.

China has as many variations of classic dishes like Sweet and Sour Chicken as you could dream of. Usually your Sichuan tends to be spicy. At least a bit more spicy then what you might get in Beijing. Of course, coastal cities will have more seafood then country side. Country side is going to be like us. You can find chicken, duck, lamb, pork, and beef. I am sure there are other forms of protein but I covered the ones we are used to seeing.
