Burrito Casserole

1 lb meat or meat replacements

1 lb Rice your family likes

1 small can of Enchilada sauce

1 small can of cheese sauce

4 Tortilla shells

Spray the casserole dish you will be using. Cook-off protein as needed or you could use leftover protein. If you have rice your family enjoys, use it instead. The first layer will be the cheese sauce, tortilla, protein, cheese sauce. Then it will be rice, shredded cheese then tortilla, and start over. Bake at 350 (or where your oven functions best) for 35 minutes. When you pull this casserole out it should have a crispy top. It’s important to let it sit for about five to ten minutes. Remember our cooking is about using what you have and like.
