Quarantine Chicken Canning

When you can your own meat you get a sense of satisfaction knowing you’re not completely dependent on a store for this part of life. Yes, I had to buy the chicken from Kroger. It is what it is for right now. 

Here are some important things to remember:

  1. Pint jars are 75 minutes or 1 hour and 15 minutes.
  2. Quarts jars are 90 minutes or 1 hour and 30 minutes.
  3. If you run a session with quarts with a pint you must use the quart time. 
  4. Cut chicken, (or whatever meat you are using) into uniform sizes. This way it all gets done at the same time. 
  5. Wipe your rim off. Especially if you are using high-fat meat like pork roast. 
  6. Keep your manual close.
  7. Don’t live your canner running unsupervised.

Other than that, can away and have a wonderful time.
