Depression Era Bean Soup

Today’s  Scratch Kitchen video is Depression Era (style) Bean Soup. I say style because while this particular soup isn’t something the moms in the Depression would have made on a regular basis, it is something they would have made as a special occasion. The reason they probably wouldn’t make this version is it has meat and dairy. Dairy and meat was rationed during the depression and during WW II. However, if dad caught a rabbit and there was cream and cheese available, this soup would have been on the table. It is a White Chicken Lasagna Soup. Delicious!

Hello y'all! I have hit a point in my life that I miss the simple dishes and times that my parents grew up in. People were kind to each other and the food was homemade from scratch.
